Southwest Spaghetti Squash, Diabetic Friendly

Say goodbye to boring SPAGHETTI SQUASH! Heartier and Healthier, this Spaghetti Squash recipe will fill you up with a delicious high protein low calorie meal! If your family likes Mexican they’re gonna love this! Also, please try my AlfredoSpaghetti Squash! It’s equally scrumptious!
For spaghetti squash:
1 TBSP Olive Oil
Kosher Salt
1/2 tsp Cumin
½ tsp Garlic Powder
filling:
1Tbsp. extra-virgin olive oil
¾ cup onion, chopped
1 fresh Jalapeno, chopped 1 cup refried beans 2 -3 cloves garlic, minced
1lb. Ground turkey (or beef)
1Tbsp. taco seasoning mix (packaged or homemade)
Seasonings: ½ teaspoon each: Kosher salt, black pepper, Cumin, Chili powder, Garlic powder, Onion powder
1 (15-oz.) can black beans
11/2cups diced tomatoes
1cup corn, (fresh, canned and drained or frozen)
1cup shredded Monterey jack
1/2cup shredded cheddar
½ cup grated Mozzarella
PREPARATION:
Preheat oven to 400°.
Prepare a baking dish or baking sheet with Aluminum Foil or Parchment Paper.
Drizzle cut sides of Spaghetti Squash with Oil and season with Salt, Chili Powder, Garlic Powder, and Cumin. Place cut side down on a large, rimmed baking sheet. Roast until tender, 30 to 35 minutes. Let cool slightly. Using a fork, scrape up squash strands.
While Squash is baking, preheat a large skillet over medium heat. Add Olive Oil. Add Onion and Jalapeno, cooking until soft (about 4 – 5 min). Add fresh Garlic and cook until fragrant (about 1 min).

Add the Ground Turkey and break up with a heavy spoon (5-6 min). Drain fat. (Remember my trick – add 2 wadded up paper towels and move them around with your spoon.
Stir in all the Seasonings listed above. Let simmer for about 5 min, stirring regularly. Add drained Black Beans, Refried Beans, Tomatoes, and Corn. Stir over heat until well blended. Remove from heat. Turn the Broiler on high now.
Fill each Squash with your Mixture, and top with Cheeses. Mozzarella goes last. Place under broiler. Do not walk away. Once it begins to brown, it could burn in just a minute. Optional to add Parsley and Cilantro.
I suggested to Bob that he add Salsa when serving. He did it and liked it. Sour Cream could also be added. I ate just like it came out of the oven. Incredible flavor just like it is.
