Other People’s Recipes: Christmas Bites

After my Great Holiday Baking Spree of 2014, I figured it was time to scale down the sweetness and focus more on the savoury. I made an appetizer for my family’s Christmas Eve shin-dig; a quiche for the Christmas Day brunch; and some homemade granola to give away as gifts (ok, granola isn’t savoury, but I didn’t think it qualified as a dessert).

I turned Katie’sChipotle Maple Sweet Potato Burgers into balls and served them with McKell’sHomemade Fig BBQ Sauce. These bites were perfect for passing around and were super tasty! I loved the sweet & spicy from the sweet potato balls, and they went so well with the Fig BBQ Sauce!

This quiche. Damnnnnn. For our Christmas Brunch, I made this Simple Tofu Quiche from Minimalist Baker. The crust is just grated potatoes, olive oil & salt, but it crisped up nicely (ahem.. a little too nicely. It was just a tad over baked which made for an interesting time trying to cut slices – much to the enjoyment of my cousins who were watching me struggle). In spite of that, this quiche was delicious!!! The filling is silken tofu with hummus, nutritional yeast and roasted veggies. It’s amazing how great it tasted with so few ingredients. I’ve mentioned it before how a typical “Standard American Diet”-style breakfast is not so vegan-friendly, but with dishes like this quiche it’s easy to change that stigma.

Due to the fact that the last few weeks of December were filled with packing, packing & packing, and eventually moving all of our belongings to a storage unit, I never made the time to go full-out Christmas shopping. As I was cleaning out the kitchen cupboards I found my stash of bulk nuts, seeds, spices & oats. Instead of throwing them out, I put them to good use and made granola! Because I had so many ingredients to use up, I made two different flavoured batches: Dana’sBanana Bread Granola, and Dreena’sGingerbread Granola. Both types were so yummy (I was happy that they made so much – I may have got a little carried away with snacking & packing!). I added candied ginger to the gingerbread granola which added a different flavour & texture and it really kicked it up a notch. Since I had so many jars, I was able to give these away all week long!
