My Chicken Stroganoff

I love cooking and eating Beef Stroganoff. But I have been meaning to come up with a Chicken Stroganoff recipe…and this is it!
It cam out great and was relatively easy to make. No canned soup by the way!
Try to use a strain less steel skillet as the benefit from the fond (little browned bits from sautéing) really amps up the flavor.
I sued boneless breasts although I am anxious to try boneless thighs next time.
This recipe will serve about 4.
Ingredient:
1 (8 ounce) boneless chicken breast
Kosher salt and black pepper
2 tbsp olive oil
2 tbsp unsalted butter
1/2 cup (1 large) shallot, halved and thin sliced
6 ounces of white mushrooms, 1/4 inch slice
2 large cloves garlic, peeled, thin sliced
2 tbsp flour
1/4 cup dry sherry
1 cup chicken broth
1 cup beef broth
2 tsp Worcestershire
2 tsp Dijon mustard
1/4 cup sour cream
Chopped parsley

Directions:
1 – Cut chicken into 2 inch strips then season with salt.
2 – Heat a large stainless steel skillet over medium high heat and add 2 tbsp of olive oil. When the oil is hot add the chicken and cooked until well browned. Flip and brown the other sides. Remove chicken to a plate and set aside.
3 – Lower heat to medium and and add 2 tbsp of unsalted butter. When the butter has melted add the sliced mushrooms and the sliced shallots and cook, stirring, for 5-6 minutes until the mushrooms have begin to brown. Season lightly with salt and pepper.
4 – Add the sliced garlic and cook for 30 seconds. Add the flour and stir in, cook about 1 minute.
5 – Add the sherry and stir until evaporated, about 2 minutes. Add the stocks and bring to a simmer. Simmer for about 3-4 minutes.
6 – Add the Worcestershire and the Dijon and stir to combine. Cook another 1 minutes.
7 – Turn the heat to low and stir in the sour cream. Taste and season with salt and pepper if necessary.
8 – If necessary, add a little cream to thin out the sauce.
9 – Serve over buttered egg noodles or white rice and garnish with chopped parsley.
