Mediterranean Artichoke Hearts with Noodles

Susan K from NC is back with us today and she is offering her newest dish, a Canadian spin on Mediterranean. She’s calling it Mediterranean Artichoke Hearts with Noodles. She says that a good Olive Oil and Pasta are necessary ingredients. Susan recommends either a Greek or Italian brand of Olive Oil, and fresh Artichoke Hearts if you can find them.
INGREDIENTS: YIELDS 2 SERVINGS
1 medium sweet onion
5 or 6 garlic cloves
¼ cup +/- Olive Oil
1/4 cup dry white wine
Juice of One medium Lemon
1 bunch Broccolini or 1 bag fresh Spinach
1/4 cup or more of feta
¼ cup +/- Black olives
Half a package of Noodles
¼-1/2 tsp Crushed Red Peppers
½ tsp Mediterranean Seasoning
PREPARATION:
Chop up your Garlic, Onions, and Broccolini. Let that simmer for a good 20 with the olive oil and white wine till it cooks down. I add some chili flakes and Mediterranean seasoning. If you’re including Spinach add it now with 1 TBSP of butter. Chop up your olives and artichoke hearts. Throw it all together. Keep it on low heat. When Pasta is ready, combine it everything and add some parsley or your fave garnish.
While the mixture is simmering, cook your Pasta (Susan used Rao’s Linguini). Drain when done, and add it to the skillet. Mix everything up and garnish with Parsley
