Maggie Monday: Honey Muffins
Sugar…..oh honey, honey…..you are my candy girl….
This recipe came from Taste of Home. The description sounded like it would be a yummy breakfast option. Sweetness with honey is always pretty darn good!
And yes, just 8 ingredients, which is often my cut off for all but “special” recipes!
I was very happy with the result. The muffins are a slightly sweet and tender and great with a cup of coffee or tea. I made some honey butter and spread it on a warm muffin.
I forgot about mine in the oven and over baked them a bit. They should be lighter and prettier than mine, so don’t make the same mistake. Set the dang timer!!
These would be great with soup, stew, or chicken and noodles!
Spectacular. Simple, sweet and satisfying!

Honey Muffins
What you need:
2 cups flour
½ cup sugar
3 tsp baking powder
½ tsp salt
1 egg
½ a cup milk
¼ cup butter, melted
¼ cup honey
What you do:
Preheat oven to 400°. Combine dry ingredients in a large bowl and whisk together. In a small bowl combine egg, milk, honey and butter. Stir into dry ingredients until moistened.

Fill paper lined muffin cups ¾ full. Bake 15-18 minutes until a toothpick inserted into the center of a muffin comes out clean. Do not over-bake as they will become too dry. Cool in pan a few minutes then remove to a wire rack. Serve warm.
