Huitlacoche!

Yummmm!

We ate some delicious huitlacoche pizza at an Italian place in Puebla.  We’ve had a few Huitlacoche tacos as well.  But what is it?

This pizza does not need sauce!

Huitlacoche is a fungus that grows on corn. It’s like a mushroom; it’s black, soft and round. It’s actually really good. If you think of it as corn truffle, instead of fungus, you might more inclined to try it. But then when you find out it’s also known as Corn Smut, you’re grossed out again. This “smut” is considered a delicacy, and I’d have to agree.
