Hearts of Palm Alfredo with Ham. Diabetic Friendly, Low Carb

Oh, what to do with leftover Ham? It has to be Healthy, we’re avoiding Potatoes, Bread, Pasta, and Rice. I wanted something quick and easy with no added Sugar, Inexpensive, and No recipe. Oh yes, I wanted another one-pan-wonder. I didn’t want too much, did I? Here’s something brand new for you! Fridge to table in about 15 minutes!
INGREDIENTS: 3 – 4 Servings
One 8 oz bag Palmini Hearts of Palm
About 2 2- 2 ½ cups Milk
2 cloves Garlic, chopped
Half a medium Onion, chopped
1 Handful grated Parmesan
1 Handful grated Romano
Optional: 1 TBSP AP Flour
Salt, Pepper
About 1 ½ cups Diced Ham
About a cup total of frozen Vegetables, thawed and drained
PREPARATION:
I truly didn’t measure anything, so you don’t need to either. Just eyeball it and you should be fine.
Open the Palmini Hearts of Palm, place in a strainer in the sink and run lots of cold Water over it. Let drain. Shake the strainer here and there to help remove the Water.
In a 2 or 3 quart saucepan, pour in the Milk. If you want to add a bit of AP Flour, do it now. Add the Garlic and Onion. Stir with a Whisk until it begins to simmer. Let it simmer, and slowly begin adding the Cheeses. If you throw in a whole handful at once it’s going to clump. Sprinkle it over the top of the Milk, Whisking after each addition. Salt and Pepper can be added now.
As it begins to thicken, add the Ham. Continue simmering. Add your thawed Vegetables. If you have leftovers, great, just drain first and throw them in. Asparagus would be very delicious. As I always say, if it sounds good, do it. The hearts of Palm go in last because they only need to be heated through.
That’s it! I told you I wanted simple! The Hearts of Palm have very little if any flavor, so give them a try!
NOTES: As with any Cheese Sauce, it will thicken up quite a lot when it cools, so try not to overdue on the added grated Cheeses. How to combat this? Add extra grated Cheese to your serving at the table the first time you eat this.
Do not add Frozen Vegetables directly to your Sauce. They will have ice on them, and when thawed, the Water will thin out your delicious Sauce. Either thaw in the microwave, or run under cold Water in a strainer. Drain well.
