Four Horsemen Truffles – Part 2
As mentioned in a previous post, the theme of the latest Gourmet Club was The Four Horsemen of the Apocalypse. I mentioned in that post that I chose to produce four different truffles, each representing the color of one of the horses.

I am not usually one that is successful at presentation, but I thought this worked well. You can see all four truffles, a chocolate horse head and a graphic of the Four Horsemen.

These little balls of chocolate are delicious and easy to make. As you can tell, I did not spend much time getting them smooth and perfect. The pictures are from my dry-run and they turned out more brown than black, so for the Gourmet Club, I added some black icing coloring (from The Ranting Wife’s stash). You can see how much darker the black truffle is in the top picture.

I couldn’t find the espresso powder, but did find cappuccino powder in stead.

Melting the chocolate.

Ready to firm up.

I put it into the Pyrex to cool off.

Scoop and roll.

Twilight Dark Chocolate Truffles
Prep Time: 5 min | Cook Time: 10 min | Servings: 45 truffles
Ingredients:
1 cup heavy cream 2 tablespoons butter 4 (1 ounce) squares baking chocolate 2 3/4 cups semi-sweet chocolate chips 2 tablespoons instant espresso powder (optional)
Directions:
1. Combine the heavy cream, butter, baking chocolate, chocolate chips, and espresso powder in a saucepan over medium heat; stirring constantly, cook until the chocolate has melted into a smooth and thick mixture. Remove from heat. Pour into a bowl and chill in refrigerator until the mixture hardens, about 1 hour, stirring several times. You can also portion out servings into mini-muffin paper as it will chill faster.
2. Line a baking sheet with waxed paper. Scoop small balls of the chocolate mixture onto the waxed paper. Store in refrigerator until the balls harden completely. Store in a cool, dry place.
