Easy Cheesy 2 Bean Chili Mac and Chili Con Carne, by Tika

Simple, and very quick, mostly one pot. Two different meals in one recipe! Busy Mom? Working Mom? Like to make meals for the freezer? Two unbelievably delicious dinners that you can eat now, and freeze the remainder. Kid friendly
INGREDIENTS:
1 lb Ground Beef or Turkey
½ lb Italian Sausage, Ground or Links
1 medium Onion, diced
3-4 cloves Garlic, chopped
2 TBSP Tomato Paste
¼ cup sliced Jalapenos
1 or 2 Mini Sweet Peppers, chopped
¼ cup sliced Jalapenos
One 28 oz cans Crushed Tomatoes
One 28 oz can Diced Tomatoes
1 cup Beef Broth (put remainder in a baggie and freeze)
Seasonings: ½ tsp Crushed Red Pepper, ½ tsp Coriander Leaves, 1 tsp Paprika, 1 tsp Chili Powder, 1 ½ tsp Cumin, ½ tsp Salt & Pepper
Two 14 oz cans Beans: choice of Kidney, White, Black, rinsed and drained
1/1/2 – 2 cups shredded: choice of Colby Jack, Fiesta Blend, Cheddar, Queso Asadero
PREPARATION:
Add Ground Beef and Sausage to a 4 quart saucepan. (If Sausage is in links, remove the casings first.) Cook over medium heat, breaking up Meats as you go. When Meats are sizzling, and grease begins to release, use a wadded paper towel to remove most of it. Add Onions, Garlic, continuing to cook until you’ve removed most of the grease. Leaving a little is fine. Add Tomato Paste and continue cooking for 2 – 3 minutes.
Add chopped Jalapenos, Crushed Tomatoes, Diced Tomatoes with Juice, Beef Broth. Add ½ tsp Crushed Red Pepper, ½ tsp Coriander Leaves, 1 tsp Paprika, 1 tsp Chili Powder, 1 ½ tsp Cumin, ½ tsp Salt & Pepper, stirring well. Let simmer for 10 minutes, covered with tilted lid. Add drained and rinsed Beans. I always use at least 2 kinds, sometimes up to 4, so do what appeals to you. Bring back to a simmer.
Now for the fun part. Scoop out as much as you would like into a 3 quart saucepan. This will be your Chili Con Carne. Taste it to adjust Seasonings if necessary. If you add additional Seasonings, let it simmer for another 5 minutes or so. You can serve this with Rice if desired.
The remainder of the mixture in the 4 quart pan will become your Cheesy Chili Mac. This pot should be at a simmer. Add a good cup of pasta (I used Elbow Macaroni, but go wild, use Ditalini, Gemelli, Fusilli, Penne, Radiatore, Rotelle, Rotini, or small Shells. If you’re feeding kids or playful adults, mix them up! Just be careful to watch the cooking time of each. Longer cooking varieties should go into the pot first. Still try not to add much over a cup because Pasta will grow much larger, and soak up some liquid as it cooks. IMPORTANT: Cook the pasta covered until still firm (al dente). Turn off the heat, but leave it on the burner. The Pasta is going to continue cooking. Add the Cheese, and stir until melted. Done!
Feel free to add additional grated Cheese on top of each bowl when serving. You could also add more sliced Jalapenos for those who like to live dangerously, and a dollop of Sour Cream, which is very nice.
Chili Con Carne AND/OR Cheesy Chili Mac go great with a Tossed Salad, Corn Bread or Corn Muffins, Grilled Cheese Sandwich, Garlic Toast, Breadsticks, Tortilla Chips, etc. The sky is the limit.
