Cupcakes in 90 seconds!
I made cupcakes in my microwave yesterday and I am feeling pretty darn proud of myself, have a look:
They were really easy too! You will need cake mix and soda (I used Diet Coke) and a microwave safe container such as a mug or a jar. I used a cute little mason canning jar. Fill a measuring cup halfway with cake mix then add enough Diet Coke to moisten the cake powder. Whisk it up good with a fork. You want it slightly thicker than a normal cake batter (as it will cook quick and not dry out as much as oven cooking) then fill the jar you are going to cook it in about 1/3 of the way full, it will expand big time! Place the jar in the microwave and nuke it on high for 45 seconds-1 minute, check it by sticking a toothpick in, if it comes out clean it is done, if the batter sticks to it nuke it for 30 more seconds. Use a pot holder to remove it from the microwave and let it cool before decorating.
You will need to wipe any chocolate that might have bubbled up on the rim before frosting. I used a piping bag and a star tip to squeeze the icing down in the jar. Add some sprinkles and viola! I decorated the top of the jar with stamps from the winter wear set. I used diecuts from the coordinating SVG set on the card. I tied a tiny spoon on the jar lid with baker’s twine for a finishing touch.
This would make a quick gift or pick-me-up for a friend. The microwave cupcakes are best the day they are made, but trust me that are pretty darn good the next day too 🙂 You are not limited to making Chocolate cakes either, you can do yellow or white cake, just use ginger ale or Sprite instead of Coke 🙂

The cutting files in the freebie kit are for easy to assemble! I simple cut them with my Cricut maching using SCAL software, a little glue and they were done! Great for batch cards!
