CSA Recap: Week 4
As I mentioned last week, I deferred my CSA Box #3 by a week, but kept my original bi-weekly schedule so I actually received two boxes in two weeks! Upon opening this week’s box, I was instantly reminded why I stuck to a bi-weekly delivery in the first place – there is so much food! Mac & I are still trying to work our way through the contents of last week’s box! I’m glad we now have two weeks until our next delivery.
Week 4 Haul:
Item Breakdown:
I’m loving all the apples! I’m definitely going to have a hard time narrowing down which recipe to make with them. I have so many pinned on my Sweet Treats Pinterest board! You can see in the picture above, but the “Qty. = 1” for carrots represents one bag, not one carrot. If you’ll remember last week, I also received 1 bag of carrots. Needless to say, I won’t be surprised if I start turning orange soon! I’m predicting a carrot cake (or two) in the very near future!
Last Week’s Dishes:
I don’t have TOO much to share as it’s only been a week since my last CSA Box, but I’ll be posting another write up for Other People’s Recipes soon that showcases some of the dishes I made last week.
I didn’t end up doing anything fancy with the romanesco, but I discovered that plain and simple is often the tastiest way to go. I simply steamed the broccoli-like veggie and sprinkled some nutritional yeast & Truly Organic Food’sRaw Organic Salad Booster on top. I also served it with roasted pepitas & sunflower seeds. It made for a very delicious side dish to my lunch!
I didn’t take a picture, but the recipe is worth mentioning anyways. I made a decent dent in my carrot stash and used up all of the shiitake mushrooms in Emma’sHearty & Wholesome Meatless Ragu. After all the veggies were chopped, this one-pot dish came together in a snap. I loved all the flavours (especially the sundried tomato with the balsamic vinegar) and it was delicious both on it’s own, and served over boiled & then roasted smashed potatoes.
Recipe Plans:
Carrots: I didn’t get around to making a carrot cake last week, so that is still on my to-do list; it’s been a while since I’ve made pancakes and my taste buds are practically begging me to make these Carrot & Coconut Pancakes from Minimalist Baker; depending if I have carrots leftover (which I likely will), I’m thinking these Carrot Cake Blondies might have to make an appearance.
Sweet Potatoes: I’m really digging Angela’sSweet Potato Casserole; Andrea’sSweet Potato Chana Masala; and for a sweet treat, Ilene’sSweet Potato Oatmeal Bars look awesome!
Shiitake Mushrooms: I’m thinking I could try my hand at veganizing Kate’sBrown Rice Risotto with Mushrooms; and I can’t remember if I’ve posted it before, but this Kale, Mushroom and Roasted Chickpea Rice Bowl from Not Enough Cinnamon looks like a perfect weeknight dinner.
Butternut Squash: I’ve been eyeing this BNS Mac & Cheese from Pickles N Honey all week long.
Oh, and if you’re wondering, that red cabbage from last week is slowly getting ready to whither away in the back of my fridge. Must. Find. Use. For. It. ASAP!!
