Cheesy Potato Soup and Corn Muffins

I made Cheesy Potato Soup today and am blown away by the fact that I’ve never shared it with all of you!  I’ve been making it for many years, and it’s one of my very favorites.  I guess I’ve been holding out.  I’m so sorry, but better late than never.  It’s a thick, hearty Soup, and out of this world delicious. (Corn Muffins recipe is included).

INGREDIENTS:  YIELDS 6 Servings

4 cups Potatoes, peeled and chopped + extra

3 TBSP Butter

½ cup Onion, chopped

¼ cup Celery, chopped

1 large Carrot, Shredded

2 cloves Garlic, chopped

3 ½ cups Chicken Broth, divided

1 Chicken Bouillon

1/3 cup Sherry

Black Pepper to taste

6-7 oz Velveeta

Extras:  In a small separate saucepan, cook 1 cup Cauliflower, ½ cup Carrots, and 1 cup Potatoes, and add after pureeing Soup.

Garnishes:  Crumbled cooked Bacon, sliced Green Onions, Grated Cheddar Cheese

PREPARATION:

In a 4 or 6 qt Dutch Oven or Soup Pot, sauté Onion, Celery, Carrots, and Garlic in Butter for about 5 minutes.  Add Potatoes, 2 cups Chicken Broth, Bouillon, and Sherry.  Cover and cook until Potatoes are tender.  Let cool slightly.

Meanwhile, in a small saucepan, add about ½ cup shredded Carrots, 1 cup diced Potatoes with skins, and 1 cup Cauliflower.  Add 1 cup Chicken Broth, cover and simmer until Vegetables are tender.  Drain, but reserve Broth.  Set aside.  The broth from the Vegetables could be saved in case you want to thin out the Soup a bit.  Dogs love a little Broth over their kibble.  Or freeze it for another recipe.

Start adding the big pot of Potatoes and Carrots into a food processor.  Add some of the Velveeta and puree until the Soup is very smooth.  Back into your Soup pot.  Continue puréeing Vegetables and Velveeta.

Add the small pan of drained Vegetables to the pot, stir, garnish, and serve.  If desired, you may add ½ tsp Sherry to your bowl when serving.

This soup goes perfectly with Cornbread or Corn Muffins, Garlic Bread, or a Crusty Loaf of any kind of Bread.

CORN MUFFINS:

The only cornbread recipe I use.  I like my Cornbread barely moist, not dry and crumbly, and a little on the sweet side.  Give this a try.  It freezes beautifully! If you love Cornbread Stuffing, this is the Cornbread to use!  This is my cornbread recipe that won first prize at the Jefferson County Fair. I always sauté chopped Onion in the same cast iron skillet that I’ll bake the Bread in.  Most of the time I add about 6 chopped Jalapeno slices.  Sometimes I add chopped Bell Pepper or chopped Mini Sweet Peppers.  (If you plan on making Cornbread Stuffing, omit the Jalapenos.  I think it ruins the Stuffing.)

Wonderful with chili, tuna casserole, soup, breakfast.  Cornbread is basically a quick bread.  It’s incredibly easy and so satisfying.  I can’t think of anything Cornbread doesn’t go with.

INGREDIENTS:

½ cup Crisco

1 cup sugar

2 eggs

1 cup + 2 TBSP yellow corn meal

2 tsp baking powder

½ tsp salt

1 ½ cup flour

1 ½ cup buttermilk

PREPARATION:

Cream Crisco and sugar until light and fluffy.

Add eggs and half of the milk.  Beat well.

Add baking powder and salt, mixing until combined.

Add corn meal, flour and remainder of milk.  Mix until combined.

The best cornbread is always baked in a cast iron pan.  The edges get so wonderfully crispy on the edges.  If you don’t have one, use a greased cake pan or baking dish.

BAKE AT 375* for about 40 minutes, or until desired browning is achieved. I don’t like mine pale and always let it get browned.  (See picture)

I often bake a half batch.  Know, however, that the leftover bread can be frozen to make stuffing with!

NOTE:  My special additives include sautéed onions, chopped jalapenos, a little cooked and crumbled bacon, mini sweet peppers, green bell pepper, fresh corn, etc.  I think you get the idea.  If it sounds good?  Add it.

Makes 15 muffins. Bake for 25 minutes or until browned around the edges.
