Cabbage and Bacon Fritters, Okonomiyaki

The first time I heard of these I was positive they were invented in Germany during and after WWII when food was scarce.  Wrong!  They first became very popular in Japan and are called Okonomiyaki. The base is a Flour Batter to which Cabbage, Carrots, and Eggs are added.  They are savory and filling.  Toppings include Sriracha Sauce, Green Onions, Chia or Sesame Seeds, etc.  If you’d like to add Meat, Shrimp, Squid, or Salmon to the Patties, feel free.  Traditionally the patties are made in larger portions but as a side dish I like them smaller.

INGREDIENTS:  Yields 8 smaller Fritters or 2 large ones

3 strips Bacon

1 large egg

2 TBSP Water

1 TBSP low sodium Soy Sauce

2 tsp Perilla Seed Oil (or Sesame Oil, Olive Oil, Grapeseed Oil, or Avocado Oil)

Salt and Pepper to taste

½ tsp Garlic Powder

½ cup AP Flour

2 ½ cups shredded Cabbage

1 large Carrot, peeled and grated

¼ cup Onion, chopped (or Green Onion)

Drizzle Olive Oil for frying

PREPARATION :

Fry Bacon until slightly crispy in a large frying pan.  Drain most of the grease.  Set Bacon aside.  Crumble Bacon when cool. Save the pan for later.

In a large bowl whisk Egg, Water, Perilla Seed Oil, Salt, Pepper, and Garlic Powder.  Add half the Flour and whisk.  Add remaining Flour and whisk until smooth and no lumps remain.

Wash Cabbage and cut off approximately ¼ of the head.  Grate the Cabbage until you have approximately 2 ½ cups.  Place in the same large bowl. Grate the Carrot and add.  Add crumbled Bacon. Add chopped Onion. Stir well. You should have a thick mixture now.  If it looks too thin, add a few extra TBSP Flour.

Over medium heat, reheat the skillet again, and add a Drizzle of Olive Oil to the leftover Bacon Grease.  Add approximately ¼ cup of your mixture to hot oil, and gently flatten with a spatula.  Repeat until the mixture is gone.  Place a cover on the skillet and give it about 5 minutes or until the Fritters are browned.  Flip over, cover, and cook until browned on the bottom.

Place cooked Fritters on a serving platter.  Top with additional Green Onions.  (A sprinkle of Sesame Seeds or Chia Seeds is very nice also.  Serve with Sriracha Sauce mixture.

Sriracha Sauce Topping:

½ cup Mayo

1 – 2 TBP Sriracha

¼ tsp Sugar

2 TBSP Rice Vinegar

With a whisk, mix all Ingredients in a small bowl, and serve with Fritters.
