BELGIAN WAFFLES

You take pancake batter and add a ton of melted butter and fold in some egg whites…voila, Belgian Waffles. Of course, you need a waffle maker as well! Made right, Belgian Waffles are the ultimate brunch offering.
Here is how I make mine. Recipe makes 4 full-sized waffles.
Ingredients:
2 cups of flour
1 1/4 cups sugar
3 1/2 tsp baking powder
4 medium eggs, separated
1 1/2 cups milk
1 cup (2 sticks) unsalted butter
1 tsp vanilla extract

Directions:
In a large mixing bowl, combine the flour, sugar, and baking powder. Mix well with a fork.
In another bowl, lightly beat the egg yolks then add the milk, melted butter, and vanilla extract.
Using a stand mixer or hand mixer, beat the egg whites until stiff peaks form.
Gently stir the wet ingredients into the dry. A few little lumps are O.K. Fold the beaten egg whites into the batter. Let the batter sit about 30 minutes before using.
Spray the waffle maker with pan spray and add abut 1 cup of batter. Cook according to the waffle maker directions, about 3 minutes. Open the maker and gently remove the waffle with a fork. Serve immediately or keep warm on a sheet pan covered with a paper towel.
