AIRFRYER BANG BANG SHRIMP

Bang Bang Shrimp is as much about the sauce as it is about the shrimp. It gets its namesake from the name of the sauce…a spicy mayonnaise sour cream.
Typically, you bread the shrimp in bread crumbs then deep fry them. I chose this time to bread with crushed Cheetohs Puffs and breadcrumbs, with a dip in cornstarch then buttermilk just before. I didn’t season with shrimp beforehand as the Cheetohs pretty much take care of that.
Experiment with the sauce, but I used Mayo, sour cream, Sriracha, and garlic powder. Sweet chile sauce and mayo is another popular option. The shrimp are extra large, u15 shrimp, meaning there are about 15 per pound.
Ingredients:
For the shrimp:
1 pound of extra large (u15) shrimp, shelled and cleaned of the digestive tract.
1 cup Cheetohs (crushed)
1/2 cup plain breadcrumbs
1/4 cup cornstarch
1/2 cup buttermilk
Pan spray
Chopped chives
For the Bang Bang sauce:
1/2 cup mayonnaise
1/4 cup sour cream
2 tbsp Sriracha sauce
1/4 tsp garlic powder
Pinch of Kosher salt
Directions:
Make the sauce by adding all the sauce ingredients to a small bowl and mix well. Place in the refrigerator for at least 30 minutes before using.
Place the Cheetohs in a small food processor and pulse until crushed. Or, just place in a plastic bag and get medieval with it with a rolling pin. Place the Cheetohs in a flat bowl with the breadcrumbs and mix well. In another bowl, place the cornstarch in another bowl. And the buttermilk in a third bowl. Bread the shrimp: cornstarch, buttermilk, then breadcrumbs.
Spray the airfryer rack or pan with cooking spray. Place the shrimp so they are not touching. I use an XL airfryer with racks that handle abut 8 shrimp at a time.
Preheat the airfryer to 400 degrees then cook for 6 minutes, turn and cook another 6 minutes.
Remove from airfryer and serve immediately with Bang Bang sauce and chopped chives or green onions. If all your shrimp annoy be cooked at once, keep the first batch warm on a wire rack over a sheet pan in the oven.
