A Preview of Coming Attractions

I’m in the midst of a vacation, about which I’ll write much more later, but I liked this photo and so thought I’d offer a taste of what’s to come.

This is an appetizer, Peas and Caviar.

The ingredients, as described on the menu, were “Sweet Pea Espuma, California Sturgeon Caviar, Crab, Pea Tendrils, and Buttermilk Gel.” The menu left out one ingredient: lobster, which seems to slip into all manner of dishes here.
